The pieces of the server view that I have found useful are the status icons that tell me at a glance if everything is running, the CPU resources, version and service pack, number of processors,  and process information for a 6.5 server.  I would suggest ignoring the rest of the information.

If you click on any of the servers, you will see the figure below.  This gives you detailed access to stats on that server.  The top left corner displays information concerning the overall state of the server.  You will see 8 processor icons.  You will see a green processor for each that is being used by SQL Server.  Below that is all of your memory configuration information.  If you are running low on memory, this will change from green to red.  Connection, thread, and active processes are displayed next to this.  If you have a 6.5 server, the Read Ahead Slots Used item will have a percentage bar after it.  If you are looking at a 7.0 server, look at the numbers since the percentage graph will be worthless.  The next block displays detailed server information.  The CPU percentage is again displayed along with tempdb usage and procedure cache usage.  If you are looking at a 7.0 server, you will see this percentage at 100 since it is dynamically allocated.  A 6.5 server will show an actual percentage of your procedure cache usage.  Next to the procedure cache are three buttons.  The first will display SQL Probe's error log.  This tracks configurable stats about your server where you can set up error thresholds.  The second will display the SQL Server error log.  The right part of the screen will display high level replication information.  The main part of the screen is dominated by the databases.  Each icon will display the important information about each database.  If there is a problem with any database, it will be displayed in red.  This will bubble up to the main interface and show the database icon in red as well.  This screen is your launch pad for more detailed information on each of the areas of your server.
